
15 Minute Sukuma Wiki (Ugandan Greens)
Ingredients
Method
- Heat oil in a pan over medium heat.
- Add onions and cook until soft and lightly golden.
- Add garlic (if using) and stir for about 30 seconds.
- Add tomatoes (or tomato paste) and cook until they break down into a soft sauce.
- Add sukuma wiki and stir well so it wilts into the tomato mixture.
- Add a small splash of water/stock, cover, and let it simmer 5–10 minutes until tender.
- Season with salt and pepper. Stir, taste, and adjust.
Notes
- Add a pinch of curry powder or paprika for warmth
- Toss in a bit of butter at the end for richness

This is my go-to 15-minute sukuma wiki recipe — quick, easy, and full of flavor. It’s made with basic ingredients, comes together in one pan, and works perfectly as a side dish for almost any meal.
In our home, this is one of those “what can I make quickly with what I have?” recipes that somehow always saves dinner.
