Easy Homemade Chicken Parmesan

This has become one of our family's favorite comfort meals. It's crispy on the outside, tender on the inside, covered in marinara and melted cheese, and perfect served over pasta with a side salad or bread.

Ingredients
  

For the Chicken
  • 2 large chicken breasts sliced in half horizontally to make 4 thinner cutlets
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • cups Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Olive oil for frying
For Topping
  • 2 cups marinara sauce
  • cups mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh parsley or basil chopped (optional)
To Serve
  • Cooked spaghetti or your favorite pasta
  • Bread garlic or your favorite type
  • Green salad

Method
 

Prepare the Chicken
  1. If your chicken breasts are thick, carefully slice them in half horizontally to create thinner cutlets. Pat dry and season both sides with salt and pepper.
Set Up the Breading Station
  1. Place the flour in one shallow bowl.
  2. In a second bowl, whisk together the eggs and milk.
  3. In a third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  4. Dredge each piece of chicken in the flour, then dip into the egg mixture, and finally coat well with the breadcrumb mixture.
Cook the Chicken
  1. Heat about ¼ inch of olive oil in a large skillet over medium heat.
  2. Cook each piece for about 3–4 minutes per side until golden brown. The chicken does not need to be fully cooked through at this stage since it will finish baking.
  3. Transfer the chicken to a paper towel-lined plate.
Assemble
  1. Preheat your oven to 400°F (200°C).
  2. Spread a small amount of marinara sauce in the bottom of a baking dish.
  3. Arrange the chicken pieces on top.
  4. Spoon marinara sauce over each piece, then top with mozzarella and Parmesan cheese.
Bake
  1. Bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and lightly golden.
  2. If you’d like extra browning, broil for the last 2–3 minutes.

Emily’s Notes

Chicken Parmesan is one of those meals that feels a little extra special while still being completely doable at home. Crispy chicken, flavorful tomato sauce, and plenty of melted cheese — it’s the kind of combination that almost always brings everyone running to the table.

This recipe is especially meaningful to our family because the chicken we used when we made this for the first time in Uganda came from the very first batch of chickens we raised on our farm here. There is something incredibly special about sitting down to a meal made with food that was part of the journey from the very beginning — watching it grow, caring for it, and eventually sharing it around our family table.

I love recipes like this because they remind me that food is about so much more than the finished dish. It’s about the stories behind the ingredients, the work that goes into creating them, and the people we gather with when the meal is ready.
