Go-To Fluffy Pancakes (Double Batch)

These are soft, fluffy, slightly sweet pancakes that come together quickly and work perfectly for family breakfasts. This is a double batch, so it feeds a crowd or gives you leftovers for later. We never have leftover pancakes here in the village – the nieces and nephews always show up when they smell pancakes cooking.

Ingredients
  

  • 3 cups all-purpose flour
  • 7 tsp baking powder
  • 2 tbsp sugar
  • ½ tsp salt
  • cups milk
  • 2 eggs
  • 6 tbsp melted butter or oil
  • 2 tsp vanilla extract optional – though I measure vanilla with my heart

Method
 

  1. In a large bowl, mix together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, whisk the milk, eggs, melted butter (or oil), and vanilla.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don’t overmix — a few lumps are okay.
  4. Heat a lightly buttered pan over medium heat.
  5. Pour batter onto the pan (about ¼ cup per pancake).
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with syrup, honey, fruit, or whatever you have on hand.

Notes

  • Batter should be thick but pourable
  • Don’t overmix — that’s the secret to fluffiness
  • Works well for freezing and reheating
  • Add mashed banana or cinnamon for variation
