Method
- In a large bowl, mix together the flour, baking powder, sugar, and salt.
- In a separate bowl, whisk the milk, eggs, melted butter (or oil), and vanilla.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don’t overmix — a few lumps are okay.
- Heat a lightly buttered pan over medium heat.
- Pour batter onto the pan (about ¼ cup per pancake).
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with syrup, honey, fruit, or whatever you have on hand.
Notes
- Batter should be thick but pourable
- Don’t overmix — that’s the secret to fluffiness
- Works well for freezing and reheating
