Method
- Heat oil in a large pot and sauté onions until soft.
- Add garlic and cook briefly.
- Stir in tomatoes (or paste) and cook until saucy.
- Add lentils, water/broth, and spices.
- Bring to a boil, then reduce heat and simmer 20–30 minutes until soft.
- Add extra veggies if using and cook a few more minutes.
- Salt to taste and serve warm.
