Emily’s Notes
This banana bread is one of those recipes that has become part of our family story. I make three loaves at a time because I always think, “Surely we’ll have enough to freeze one for later.”
Somehow, that never happens.
Between breakfast, afternoon snacks, and little hands coming back for “just one more piece,” these three loaves disappear faster than I expect every single time.
I love this recipe because it’s simple, comforting, and makes the most of those bananas that are just a little too ripe to eat. It’s the kind of homemade treat that makes a house feel like home — the smell of banana bread baking, everyone gathering in the kitchen, and a little something sweet waiting on the table.
Whether you make it for your family, share a loaf with friends, or actually manage to freeze one (teach me your secrets!), I hope this banana bread brings as much joy to your kitchen as it does to ours.
